Zucchini Pesto Noodles Recipe

The Spirilzing craz is on! Every where you look on social media you see vegetables that look like noodles. We love it! Today I’m going to share with you my top secret home made pesto that I tossed into my Zucchini noodles. When I serve it I garnish with some fresh basil and a few pine nuts. It’s healthy, delicious, and looks great.

     PestoZuccininoodles
2       Packages of fresh basil or from your garden
1        Handful of fresh parsley
2-3   Cloves garlic
1        Handful of  pine nuts
1        Handful of  pistachio salted or not
Kosher salt and pepper to taste
1        Cup olive oil

 

 

I grind all the ingredients together in a blender while poring in the olive oil. I like my pesto a little thick so I don’t use a full cup of olive oil. Really up to you. Sometimes if I don’t have pine nuts I substitute walnuts. It gives it a little bit of a nuttier taste. I still like it.
